Cáhuil Sal de Mar
Made with the same beans from Óbolo’s award winning Peru bar, this chocolate adds a touch of salt from the Chilean village of Cáhuli.
In Cáhuli, salt is life. Over 60% of the population lives on the proceeds of salt production and have been doing so for centuries. The salt makers channel pure ocean water into dozens of pools during the warmer months. They circulate the waters to avoid having any concentration of undesired elements. During January and February the ocean water slowly evaporates leaving behind the white-ish gray crystals that are later “raked” into piles according to their quality. Along the road dotted with tall evergreens, there are many small family homes selling bags of this salt from 1kg up to sacks of 50kg or more.
Among the characteristics of Cáhuil seal is the slightly yellowish colour and its great capacity to dissolve easily in various foods. It helps enhance the natural honey and vanilla notes inherent in Óbolo’s chocolate without altering it’s smooth, silky texture.
