As ever with Bonnat, this bar has a thick and buttery texture. Do not be deceived by this dark milk chocolate – while the milk gives the bar a certain sweetness the high cocoa percentage means that this bar doesn’t have the caramel-like quality of some milk chocolates. Instead of the overwhelming sugary taste of many mass-produced milk chocolates, the bar has smokey flavour notes with a touch of berry beneath the surface.
As with Papuan chocolate, Indonesian cacao is dried with the help of open fires whose smoke infuses the beans with a distinctive aroma, resulting in the highly unusual flavour notes typical of bars from these countries. This smoked flavour is particularly intriguing in a milk chocolate, giving the bar a more savoury note. Bonnat’s dark milk bars are well worth a try, both for milk and dark chocolate lovers.
